Screw Cap versus Cork

 

When do the wines start to differ?

We have observed that there is little difference between the two sealed wines until three to four years after bottling.

 

What happens at years three to four?

Maturation

 

Almost non-existent.  The wine retains the fresh fruit character of a young wine

Slowly developing aged characteristics.  Still fresh and vibrant

Oxidation

 

Almost non-existent.  This is causing the wine to develop reductive characteristics eg. evident oak and tannins

Slowly developing the wine.  Silky integration of primary fruit and oak flavours adding a degree of spiciness and richness not evident in the young wine
